An outstanding opportunity for a strong experienced Executive Sous/ Senior Chef has arisen at a world leading luxury hotel. This exciting new position has arisen for a strong Sous Chef to work in a luxurious hotel brand in Co. Kerry. This is an outstanding opportunity for an experienced Sous Chef to be part of a well-established team going through an exciting transition.

If you are an experienced Senior Sous Chef please take note. An exciting, challenging yet very rewarding position for right Sous Chef who has the passion, knowledge & willingness to lead and coach a great team. This luxurious site hosts a very large number of guests all year round. As Sous Chef you will be expected to exceed all guest expectations brining your obsession for food and love of cooking to each & every dish. The right Sous Chef will be managing a large brigade of chefs & reporting directly to the Executive Head Chef.

Experience in 5* Hotels or Fine Dining Restaurants of 2/3 AA Rosette/Demi Michelin etc. Kitchen Management Experience is essential for this role.

Specific Duties:
" Assist the Head Chef to retain the 5 star standards in the Fine Dining restaurant whilst working towards achieving industry awards.
" Deputise in the absence of the Executive Head chef
" Oversee all satellite kitchens and the main kitchen to include freshness of ingredients, level of staffing, mise en place.
" Assist with menu writing and dish creating
" Ensure that the section is set for service.
" Assist in training all Chefs and Kitchen Porters.
" Ensure the kitchen is organised with the correct daily function sheets, mis en place, job lists and that jobs are prioritised in the correct order.
" Assist in maintaining a professional level in each kitchen adhering to the Standard Operating Procedures and Policies.
" Assist and prepare the day to day ordering for the kitchen.
" Ensure that the kitchen areas are clean and meet safety standards.
" Assist with HACCP and Health and Safety procedures.
" Ensure that all kitchen equipment is fully functional, stored correctly and staff are looking after the equipment.


Salary 38-40K ( Accommodation available)
